Fused Indian Chicken Rice


How come your dewali be without some good food. I was experimenting of fusing Mid East and South East Asia with some Indian flavor and to create a dish which is fast to cook. SO here you go a chicken-rice dish (as you call in Singapore) or a biriyani in India or mid east which takes about 30mins to cook!!!




You need –


1. Small whole dressed chicken(about 800 Gm)
2. 2 small onion
3. 1 Tomato
4. 1 small capsicum
5. Half a cup of yogurt
6. ½ lemon




7. about 5 mace flower (dried)
8. 1 cinnamon stick (2 inch)
9. 6 whole cardamom
10. 3 spoon garam masala powder
11. 1 tea spoon red chili powder
12. salt to taste
13. 2 spoon white oil
14. 1 and ½ cup of basmati

How to prepare


1. chop the onion in thin small pieces
2. chop the tomato
3. Chop Capsicum
4. In a bowl mix the yogurt, half of the chopped tomato, lime juice, garam masala powder (2 spoon)red chilly powder , half spoon salt. Mix them all well together.
5. Soak the rice for about half hour with half spoon of salt in the water.


Now , make deep straight cuts on the whole chicken so that the spices can get into the flesh. Apply the mix all over the chicken (make sure they are applied all over the chicken’s body and the in the hollow belly)

Now take a big bowl, take the drained rice and mix chopped onion, remaining tomato, capsicum 1 tbs garam masala powder, mace flower, cardamom and 1 tbs salt. Add 2 tbs white oil in the rice.


Create a flat bed of rice in the bowl and on top of the bed keep the chicken. Add about ½ cup water in the rice and cover the bowl with the lid.


Put the bowl in Microwave oven with high temp for about 30mins. Keep checking about the chicken with the fork. The moment the rice and chicken is cooked, mix the rice with chicken. Cut generous piece of the chicken and rice and serve!!!


Voila!!! The best fused chicken rice you ever had!
